Chocolate Chip Cookies
There is nothing quite like a fresh chocolate chip cookie. This particular recipe has become my favorite over the years. It is soft and chewy and full of chocolate. Whenever I make this, I always have memories of coming home from school to a house filled with the smell of chocolate chip cookies. All five of us with chocolate smeared all over our faces. Great memories!
1 cup butter, softened
1/2 cup granulated sugar
1 1/2 cups brown sugar, packed
2 eggs
2 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 packages (12 ounce) semisweet chocolate chips
Preheat oven to 350 degrees. Cream together the butter and sugars in a large bowl. Add in the eggs and vanilla extract. In a different bowl, sift together the flour, salt, baking powder, and baking soda. Add the dry ingredients to the wet ingredients. Stir in the chocolate chips. Roll into balls and place on an ungreased cookie sheet. Bake in preheated oven for 9 to 10 minutes.
Oatmeal Raisin Cookies
My husband is not a sweets man but he loves these cookies. The first time I made these it was for some friends. They almost all disappeared in one night! My husband and another friend of ours (also not a sweets man) were eating these the way I eat chocolate (with both hands, one right after the other). Whenever I make these, I always find my husband sneaking one when he thinks I am not looking. He will just look at me, smile sheepishly and say, "What? They're good." Ah yes, the highest compliment any baker can receive. :-)
3 eggs
1 cup raisins
1 teaspoon vanilla extract
Beat the eggs, stir in the vanilla extract, and then stir in the raisins. Refrigerate this mixture for at least one hour.
1 cup butter flavored shortening
1 cup packed brown sugar
1 cup white sugar
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups oats (quick cooking kind)
In a large bowl, mix together the shortening and sugars. Add in the flour, baking soda, salt and cinnamon. Add in the raisin mixture and the oats. Roll it into balls and bake on ungreased cookie sheets for 10 to 12 minutes in a 350 degree oven.

Homemade Salsa
WOW! Amy has out done herself this time! Her homemade salsa recipe is unbelievable and is great for parties! Grab a bag of Tostitos and a bowl of this fabulous salsa, sit back in your chair, turn on your favorite TV show and enjoy this awesome recipe.
2 Cans Petite Tomatoes
½ Green Peppers
⅓ cup Chopped Onion (white)
½ Banana Pepper
(2) ¼ Slices Jalapeño Pepper
½ tsp Coarse Ground Black Pepper
Sprinkle of Salt
¼ tsp Cumin
Juice of 1 Lime
2 Sprigs of Cilantro
¼ tsp Garlic
Stir then chill for 1 hour and serve. If you like hot salsas just add more Jalapeño to your desired temperature.

Grilled Trout
I am very picky when it comes to eating fish but Grilled trout has become one of my favorite dishes. When choosing a trout find a store that carries fresh trout because the fresher the fish is the better it will taste. Also, smell the meat if it smells fishy then it is not fresh. Usually fish will have some fish smell to it but it won’t be very strong. If the smell knocks you off your feet then it’s not fresh.
Now I am not a person who follows a particular recipe but I will do my best to describe exactly how I cook trout on the grill. I am a charcoal grill kind of guy using hickory wood chips to give the fish a kind of smoke taste. The following is a list of ingredients I use when cooking trout on the grill.
Garlic
Real Butter
Onion
Green pepper
Fresh Trout
Salt & Pepper
Lawry’s Seasoning Salt
Lawry’s Seafood Salt
I start by getting my grill really hot and smoky. While the grill is getting hot take tin foil and make square dishes with 1” sides. You can make 1 dish for each fillet or one big enough to fit two fillets.
Now chop up the garlic into fine pieces. Cut the onion and green pepper into small strips.
Rub a stick of real butter onto the tin foil add the garlic, onion and green pepper and place on the grill.
When the garlic has a light brown tint push garlic, onion and green pepper to the sides add more butter then lay fillet/s in the center. Sprinkle seasoning and seafood salt on the fillets and shut the lid. Barely open the vent on the lid of grill to allow smoke to escape but also to allow the smoke to cover the fish. After about 3 minutes check fish if fish looks white on the edges very carefully flip the fish. Allow 2 to 3mins to cook on other side then remove from grill. ENJOY!
