Potato Salad Recipe

Potato And Mayo Salad

The secret to a good potato salad is to mix the dressing in while the potato is still hot.

1 kg Potatoes, cut into cubes
2 Chopped Onions
1 Green chill
30 ml Sunflower oil
30 ml White vinegar
15 ml Mustard powder
250 ml Mayonnaise
1 Bunch chopped fresh coriander
10 ml Peri peri
5 ml Salt
5 ml Black pepper


Method: -

Cook potatoes in boiling salted water until tender. Drain potatoes and dry lightly with absorbent paper.

Shop onions and add to potatoes; leave aside.

Whisk together chilli, oil, vinegar, mustard powder, mayonnaise, coriander, peri-peri, salt and pepper.

Toss and lightly mix into potatoes.

Serve chilled with braised chops or grilled fish.

Superbowl Recipes - No Fuss Chicken Wings

Finger lickin good chicken wings that will fall off the bone.

25 whole chicken wings

1 (12 oz.) bottle chili sauce

1/4 cup lemon juice

1/4 cup molasses

2 tablespoons Worcestershire sauce

6 garlic cloves, minced

1 tablespoon chili powder

1 tablespoon salsa

1 teaspoon garlic salt

3 drops hot pepper sauce


Directions

Cut chicken wings into three sections; discard wing tips. Place the wings into a 5-quart slow cooker.

In a bowl, combine the remaining ingredients and pour over the chicken. Stir to coat completely. Cover and cook on low for 8 hours or until the chicken is tender.

These cheesey nacho chips are really easy to make and will be a big hit!

1 (6 oz.) pkg. processed cheese product, cubed

1/4 cup shredded Cheddar cheese

3 tablespoons milk

1-1/2 teaspoons taco seasoning mix

1-1/2 cups Roma tomatoes, finely chopped

Fresh cilantro, chopped

Tortilla chips

Directions

In a medium saucepan, cook the cubed cheese product, Cheddar cheese, milk and the taco seasoing mix over medium low heat; stirring frequently. Cook until the cheeses are melted and a smooth consistency.

Meanwhile, arrange the tortilla chips on a large serving platter.

Pour the warm cheese mixture over the chips. Top with tomatoes and cilantro. Serve immediately.

This version is made in a slow cooker, which allows the spices, cheese and butter to mingle together into a savory snack.

4 cups Wheat Chex

4 cups Cheerios

3 cups pretzel sticks

1 (12 oz.) can salted peanuts

1/4 cup butter

2 to 3 tablespoons grated Parmesan cheese

1 teaspoon celery salt

1/2 to 3/4 teasoon seasoned salt

Directions

In a 5-quart slow cooker, combine the Wheat Chex, Cheerios, pretzels and the peanuts.

In a bowl, combine the butter, Parmesan cheese, celery salt and seasoned salt; mix well. Drizzle over the cereal mixture and mix thoroughly. Cover and cook on low heat for up to 3 hours; stirring every 30 minutes.

Serve warm or at room temperature.

Hosting a New Year's Eve Party can be great fun. It's a way to reminisce with friends, and to look forward to what the new year will bring. Here are some ideas for food and drinks to start you off:

New Year’s Eve offers plenty of parties with friends and family to celebrate another year. You will find there are many menu options for New Year’s Eve. Most of these options include a lot of champagne, wine or beer depending on your preferences. You will also want to include plenty of items to eat. If you are having an informal party you may just get cold cut platters, cheese platters, vegetable platters, and many chips and dips to share. Or you could have a full scale meal with a potluck dinner for you and your friends. Here are a few other ideas:

A typical dip you may find at a New Year’s Eve party will be ranch. You can make the ranch from scratch or you may just buy a jar of pre-made ranch dip. My favorite ranch dip is created with sour cream. You can find the powered ingredient you need for ranch at any store. I prefer Hidden Valley combined with a little sour cream to make a sturdy yet tasty dip.

A great recipe for hors d’oeuvres includes Little Smokies in a beer sauce with a cheese dip. First you need a package of Little Smokies and a bottle of beer. Any beer will do. You heat the sausages in the beer while you create a cheese sauce. Typically a cheese sauce will include a little milk, flour, and your favorite cheese. It can be cheddar, Monterey jack, or even Colby. The idea is to have something that works well with the beer flavor, but also not over power the beer flavor.

Catering for your New Year’s Eve party need not be difficult. Try to prepare as much of the food ahead of time as you can; microwave-friendly food will make your party MUCH easier. Above all, however, enjoy spending time with your guests and ushering in the New Year in style.

Labor Day Party Menu Ideas for a Summer Labor Day Party

Labor Day is one of the last chances you and your family will get to enjoy a summer barbeque, and it really is a nice way to celebrate all the hard work you and your loved ones put in for the rest of the year. It was created by the Central Labor Union to give working men the day off; now, many people see it as a paid opportunity to enjoy spend time with loved ones! Here are a few catering ideas:

A menu you may create for Labor Day is barbeque ribs, potato salad, coleslaw, watermelon, and cupcakes for dessert. Any simple, tasty, picnic-friendly food that your family loves will be suitable though.
Broccoli salad is another healthy dish you may find for Labor Day. All you need is a 1-2 large heads of broccoli, ½ red onion chopped, 10-12 slices of cooked bacon broken up (substitute bacon bits), ½ cup of raisins, 1 cup of mayonnaise, ½ cup of sugar, and 2 tablespoons of vinegar. You just combine all of the ingredients and you have a salad to eat along with your barbeque.

Another great recipe is ham and cheese salad. You take 1 cup of chopped ham, 1 cup of chopped cheese (preferably to types of cheese, any kind), ¼ chopped onion, ¼ chopped red pepper, and 1/2 cup of mayonnaise. You may need to add more mayonnaise to make it creamier, but that will be your choice. You combine all the ingredients in a bowl until the ingredients are well coated with mayonnaise.

Dips and other salads work great with crackers or chips depending on your preference for Labor Day.

It’s a good idea to keep your food options for Labor Day simple. And just because food is fairly quick and easy to make, doesn’t mean it shouldn’t taste good too. Before you know it your guests will be coming back for more.

Memorial Day Menu and Recipes

This Memorial Day cook up some lip smacking delicacies for your friends and family. Show off your culinary calibers and soak in all the praises showered on you. Its summer!!! And Memorial Day is the right occasion to treat your taste buds to some sizzling barbecue, steaks, grilled potatoes, pies, desserts, salads and much more. Barbeque undoubtedly tops the list. If you’re planning a Memorial Day cookout or a special Memorial Day barbecue party this year here’s a list of items to include in your menu.

• A succulent barbecue

• Steaks

• Bacons
• Delicious Chicken preparations (anything will be gorged on)

• Grilled Asparagus

• Corn on the Cob

• Roasted potato salads or shrimp salads

• Grilled Zucchini

• Cream and cheese sandwiches

• Baked beans

• Strawberry Melon Wedges

• Pork Ribs

• Hotdogs

• Burgers (lamb, chicken…anything!)

• Strawberry Cream Pie

• Lemonade (a real refreshing idea)

• Sundaes

• Special Memorial Day Cake (top it with blue syrups, white cream and red cherries to give that patriotic flavor in it)

• Memorial Day pies (don’t forget the blueberry and raspberry toppings)

If the kitchen is your lab and you love to experiment around with some cool recipes this summer, here are a few you might just try out. What’s better than to start off with a yummy salad recipe –

Spinach & Strawberry Salad

Ingredients:

• One 9 ounce package of baby spinach leaves

• 1 1/2 cups of sliced strawberries

• 1/3 cup toasted almonds

• 3-4 sliced green onions

• Olive oil

• White Balsamic vinegar

• Sea salt and fresh ground pepper ( to taste)

Instructions:

• Toast the almonds on a pan in the oven at 300 degrees F for a few minutes (they brown quickly) or place the almonds in a small skillet over medium heat until toasted (shake the skillet a few times while over the heat to toast evenly)

• Make sure to remove any stems from the spinach and place the leaves in a salad bowl with the green onions

• Drizzle with a little olive oil (just enough to lightly coat the spinach)

• Place the bowl in the refrigerator until serving time
To serve:

• Rinse the strawberries just before tossing the salad, dry them and slice them

• Add the toasted almonds and sliced strawberries to the salad bowl and sprinkle with white balsamic vinaigrette to taste

• Add a little salt and fresh ground pepper and toss the salad and then plate

And who can ignore a BBQ recipe on Memorial Day. Here’s one to check out –

BBQ Steaks

1/2 cup balsamic vinegar

1/4 cup soy sauce

3 tablespoons minced garlic

2 tablespoons olive oil

2 teaspoons ground black pepper

1 teaspoon Worcestershire sauce

1 teaspoon onion powder

salt ( to taste )

1/2 teaspoon liquid smoke flavoring

1 pinch cayenne pepper

2 (1/2 pound) beef rib eye steaks



In a medium bowl, combine the vinegar, soy sauce, garlic, olive oil, ground black pepper, Worcestershire sauce, onion powder, salt, liquid smoke and cayenne pepper.
Place steaks in a shallow, nonporous dish, and pour marinade over steaks. For optimum flavor, rub the liquid into the meat. Cover, and let marinate in the refrigerator for 24 to 48 hours.
Preheat an outdoor grill for medium-high to high heat. Grill steaks for 7 to 8 minutes per side on a lightly oiled grate.

And here’s one for the burger lovers –

Wasabi Salmon Burgers

Ingredients

• 2 tablespoons reduced-sodium soy sauce

• 1 1/2 teaspoons wasabi powder

• 1 pound salmon fillet

• 2 each scallions

• 1 each egg

• 2 tablespoons minced peeled fresh ginger

• 1 teaspoon toasted sesame oil

Cooking Instructions

Whisk soy sauce, wasabi powder and honey in a small bowl until smooth. Set aside.
With a large chef's knife, chop salmon using quick, even, straight-up-and-down motions (do not rock the knife through the fish or it will turn mushy). Continue chopping, rotating the knife, until you have a mass of roughly 1/4-inch pieces. Transfer to a large bowl. Add scallions, egg, ginger and oil; stir to combine. Form the mixture into 4 patties. The mixture will be moist and loose, but holds together nicely once the first side is cooked.
Coat a large nonstick skillet with cooking spray and heat over medium heat for 1 minute. Add the patties and cook for 4 minutes. Turn and continue to cook until firm and fragrant, about 3 minutes. Spoon the reserved wasabi glaze evenly over the burgers and cook for 15 seconds more. Serve immediately.

Memorial Day Party Menu Ideas for a Relaxing Memorial Day Party

The first day of summer vacation for many of us is also the first day of barbequing for family and friends. Here are some ideas you can start with:

A great menu for Memorial Day would be barbequed chicken skews with coleslaw, baked beans, watermelon or strawberries, and a baked strawberry rhubarb pie for dessert.

For barbequed chicken skews you will need to have chicken, marinated in a sauce of your choice. Smoky barbeque, sweet chilli, teriyaki, sweet and sour or satay sauces are all popular. You will also need pineapple, peppers, and onions. Cut the ingredients into one-inch pieces. The vegetables should be 1 inch by 1 centimeter or less. The idea is to have enough substance to skew the ingredients with so it will stay on. Then you simple place the skewers on the grill and barbeque until the meat is cooked through.

For a glazed strawberry rhubarb pie you will need 1 ¼ cup sugar, 1/8 teaspoon salt, 1/3 cup flour, 2 cups fresh strawberries, 2 cups fresh rhubarb cut into 1 inch pieces, 2 tablespoons butter, 1 tablespoon sugar, and 2 pie crusts. You will combine the sugar, salt and flour together. Arrange the strawberries and rhubarb in the pie pan with 1 piecrust. Sprinkle half of the flour mixture into the crust then create another layer until the remaining fruit and mixture are in the crust. Dot the mixture with butter. Place the second crust on top in either a latticework or cut holes in the top. Sprinkle the tablespoon of sugar on the top of the crust. You will bake the pie for 40 to 50 minutes at 425 degrees. Make sure the rhubarb is tender and the crust is browned.

Making simple food that you know your guests will enjoy should be foremost in your mind. At least then instead of slaving in the kitchen, you’ll be able to enjoy the celebrations with your guests.

Learn To Be A Chef Right From Your Living Room

If you love to cook and really love to eat good food, then you need to be watching some of the great cooking shows that come on your television. There are so many cooking and good eating programs that you can learn from if you have cable or satellite channels. Just about any time of the day or night there is some fantastic cooking going on somewhere.

It does not really matter what type of food you like, there is someone that can teach you the essentials that you need to cook it. You can learn about all kinds of food ingredients, things like spices, cheeses, oils, flours, meals, meats, vegetables and more. Then there is the main course that everyone needs to know how to prepare, deserts.

The Food Network channel is all about great food and how to prepare it.. If you want to learn how to cook with a good helping of comedy, then Good Eats, hosted by Alton Brown, is the show for you. He offers lots of great recipes as well as what utensils and cooking apparatus are best to use. He dispels many cooking myths and teaches how to do a lot of things in different ways. He has a great personality and his show can not help but captivate you. It is different than your average how to program. He could be a comedian as well as a great food preparer.

If you love southern cooking, then you must catch Paula Dean. She is defiantly country as cornbread with her cooking as well as her personality. She is simply lovable. There is not be a pretentious bone in her body. She is a down home cook who knows her stuff. She teaches how to make all the southern treats that either already love or some you have heard about and always wanted to try.. She has many cook books and videos that you can purchase. She owns and operates a very popular restaurant in Savannah, Ga. With her sons. It is called The Lady and Sons.

If you like reality type shows, The Iron Chef is very popular and who would have thought that a cook off could be so thrilling. Three master chefs star in this show and they go up against lesser known chefs. There is a secret ingredient that must be used in a variety of dishes. The show is hosted by Alton Brown. The show originally started in Japan and is a sensation over there. Apparently it has become a sensation in America as well.

You can also catch programs that have chefs that we are used to seeing on television everywhere like Rachael Ray, Wolfgang Puck, and Emeril Lagasse.

Super Bowl Recipe - Barbecue Wing Special

It's that time year again when two rivalry's bash helmets to become Super Bowl heroes. The Super Bowl is one of Americas favorite events. Friends and family get together to party and watch their favorite football team play in the Super Bowl. Are you ready for some Super Bowl recipes? I am a huge fan of barbecue wings! While surfing on the internet I came across one of Brandy SummersSpecial Barbecue Wing Recipe. Get your printer ready for this tangy recipe and enjoy!

Recipes for Superbowl Party - Tangy Barbecue Wings

These savory chicken wings are so lip smacking good and will be gone before halftime.

25 (5 pounds) whole chicken wings
2-1/2 cups hot and spicy ketchup
2/3 cup white vinegar
1/2 cup plus 5 tablespoons honey
1/2 cup molasses
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 to 1 teaspoon Liquid Smoke, optional

Directions

Preheat oven to 375 degrees.
Prepare two 15x10-inch baking pans with nonstick cooking spray. Cut up the chicken wings into three sections. Discard the wing tips.

Place the chicken wings into the prepared baking pans. Bake, uncovered, for 30 minutes; drain. Turn the wings over and bake for another 20 to 25 minutes, or until chicken juices run clear.

Meanwhile, in a large saucepan, combine the ketchup, vinegar, honey, molasses, salt, Worcestershire sauce, onion powder and chili powder. Add in the Liquid Smoke, if desired. Bring to a boil.

Reduce heat and simmer, uncovered, for 25 to 30 minutes. Drain wings; place 1/3 of wings into a 5-quart slow cooker. Top with 1 cup of sauce. Repeat this two times with remaining wings and sauce.

Cover and cook on low heat for 3 to 4 hours. Stir before serving.

The perfect cheese spread for any football party.

1 (8 oz.) pkg. cream cheese, softened
2 cups shredded cheddar cheese
1 cup provolone cheese, shredded
1 cup crabmeat, drained, flaked and cartilage removed
1 cup cottage cheese
2 tespoons seafood seasoning
2 teaspoons Worcestershire sauce
1 teaspoon prepared mustard
Pretzel sticks
Assorted crackers

Directions

In a large mixing bowl, beat the cream cheese until smooth. Add in the cheddar cheese, provolone cheese, crab, cottage cheese, seafood seasoning, Worcestershire sauce and the mustard. Mix well. Cover and refrigerate overnight.

Form the cheese mixture into a football shape with your hands. Arrange pretzel sticks on top to make football laces. Serve with crackers.

A great party finger food made with pita bread, provolone cheese and salsa.

2 (6-inch) pita pockets
2 large cloves garlic, minced
3 tablespoons olive oil
1 tablespoon butter
1/4 teaspoon oregano
1/4 teaspoon sea salt
1/4 teaspoon pepper
16 slices pepperoni
4 round slices provolone cheese, cut into wedge shapes
1/3 cup medium chunky salsa

Directions

Preheat oven to 375 degrees.
In a heatproof bowl, combine the olive oil, oregano, salt and pepper. Microwave on high heat for 40 seconds. Remove from microwave and stir in the butter; set aside.

Cut each pita pocket into 4 pizza shaped wedges. Cutting along the curved outer edge of each wedge, separate again into 2 pieces. Brush both sides of wedges liberally with the warm olive oil mixture.

Place the wedges, crust side down, onto a baking sheet. Top each wedge with salsa, a slice of provolone cheese and a slice of pepperoni. Drizzle with remaining olive oil and sprinkle with sea salt.

Bake for 15 minutes or until cheese is bubbly. Serve warm.
